Ingredients
4 pieces of desalted codfish1 lb (500 g) potatoes, sliced into rounds1 large onion, sliced into rings3 garlic cloves, minced1/4 cup olive oil1/2 cup green olives2 tbsp fresh parsley, choppedJuice of 1/2 lemonBlack pepper, to tasteSalt, if needed (adjust depending on the saltiness of the cod)

Preparation
- Boil the potatoes in water with a pinch of salt for 8-10 minutes until tender but firm. Drain and set aside.
- Pat the cod pieces dry with a paper towel.
- In a baking dish, arrange the potato and onion slices.
- Drizzle with a little olive oil, sprinkle the minced garlic, and season with black pepper.
- Lay the codfish pieces on top of the potatoes and onions.
- Add the olives and drizzle everything with the lemon juice and the remaining olive oil.
- Preheat the oven to 400°F (200°C).
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for another 10-15 minutes, until the cod is golden and fully cooked.
- Remove from the oven and sprinkle with chopped parsley.
- Serve hot, accompanied by white rice or fresh bread.
