Preparation

  1. Preheat the oven to 350°F (180°C) and grease the baking pan with butter and dust it with flour.
  2. In a large bowl, beat the eggs, sugar, and butter until light and creamy.
  3. Gradually add the flour and baking powder, alternating with the coconut milk, mixing gently.
  4. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  5. While the cake bakes, mix the milk, sweetened condensed milk, and half of the shredded coconut in a bowl.
  6. Once the cake is out of the oven, poke holes all over with a fork and pour the milk mixture over it.
  7. Sprinkle the remaining shredded coconut on top and refrigerate for at least 3 hours before serving.
