Ingredients
2 cups (14 oz) rice2 large round cans of tuna (about 10 oz each)1 chopped onion2 cloves garlic, minced1 lb (17.5 oz) diced tomatoes4 1/4 cups (1 quart) water1/3 cup (3.4 fl oz) olive oil1 bay leafChopped parsley, to tasteSalt and pepper, to taste8 hard-boiled eggs

Preparation
- In a pot, heat the olive oil and sauté the chopped onion, minced garlic, and bay leaf. Add the peeled and chopped tomatoes and cook until they break down into a sauce.
- Pour in the water, add a bit of chopped parsley, and season with salt and pepper. Once the broth starts boiling, add the rice and let it cook.
- Meanwhile, boil the eggs and drain the tuna, flaking it with a fork.
- When the rice is almost done, stir in the tuna and mix well. Turn off the heat.
- Serve immediately, garnished with chopped boiled eggs and sprinkled with parsley.
