2 cups (14 oz) rice2 large round cans of tuna (about 10 oz each)1 chopped onion2 cloves garlic, minced1 lb (17.5 oz) diced tomatoes4 1/4 cups (1 quart) water1/3 cup (3.4 fl oz) olive oil1 bay leafChopped parsley, to tasteSalt and pepper, to taste8 hard-boiled eggs

Preparation

  1. In a pot, heat the olive oil and sauté the chopped onion, minced garlic, and bay leaf. Add the peeled and chopped tomatoes and cook until they break down into a sauce.
  2. Pour in the water, add a bit of chopped parsley, and season with salt and pepper. Once the broth starts boiling, add the rice and let it cook.
  3. Meanwhile, boil the eggs and drain the tuna, flaking it with a fork.
  4. When the rice is almost done, stir in the tuna and mix well. Turn off the heat.
  5. Serve immediately, garnished with chopped boiled eggs and sprinkled with parsley.
