2 tbsp (25 g) sugar (for the caramel)6 eggs1 1/2 cups (300 g) sugar2 tbsp cornstarch (Maizena)1/4 cup (60 ml) Port wineZest of 1 lemon2 cups (500 ml) whole milk

Preparation
- Heat the 2 tablespoons of sugar until it melts into a golden caramel.
- Pour it into the pudding mold and set aside.
- In a bowl, combine the sugar, cornstarch, and lemon zest.
- Mix in the Port wine and eggs, one at a time, beating well.
- Gradually add the milk, mixing well.
- Strain the mixture to remove lumps and pour it into the caramelized mold.
- Place the pudding mold (covered with a lid or foil) inside a large pot with 1.2 inches (2-3 cm) of water.
- Bake in a water bath at 400°F (200°C) for 1 hour.
- Let it cool completely before unmolding.
