Ingredients

2 tbsp (25 g) sugar (for the caramel)6 eggs1 1/2 cups (300 g) sugar2 tbsp cornstarch (Maizena)1/4 cup (60 ml) Port wineZest of 1 lemon2 cups (500 ml) whole milk

Get Portuguese ingredients

Preparation

  1. Heat the 2 tablespoons of sugar until it melts into a golden caramel. 
  2. Pour it into the pudding mold and set aside.
  3. In a bowl, combine the sugar, cornstarch, and lemon zest.
  4. Mix in the Port wine and eggs, one at a time, beating well.
  5. Gradually add the milk, mixing well. 
  6. Strain the mixture to remove lumps and pour it into the caramelized mold.
  7. Place the pudding mold (covered with a lid or foil) inside a large pot with 1.2 inches (2-3 cm) of water.
  8. Bake in a water bath at 400°F (200°C) for 1 hour.
  9. Let it cool completely before unmolding.
