- In a pan, heat 2 tablespoons of olive oil at medium heat, and fry the eggs to your liking.
- Once the eggs are fried, set them aside.
- In the same pan, add the remaining 4 tablespoons of olive oil, garlic, salt, pepper sauce and wine or vinegar, bring to a boil and remove from the heat.
- Place eggs in a serving plate, and pour the sauce over them.
- Serve with fries.
