How long is this good in the fridge for? Also can I use strawberry jello instead of the Gelatin so I can skip using real strawberries?

Cover the mousse with plastic wrap and keep in the fridge up to 4-5 days. Yes you can use jello instead.

If you use the powder, you don't have to put it in cold water, just the 1/2 cup of hot water.

The amount of gelatin if using powder is an awful lot, and I think this would not be very flavorful as a result.

Frederick, unflavored gelatin should have no taste or odor so therefore it won't effect the taste at all and will actually absorb the taste of the strawberries.
