Portuguese Green Peas with Chouriço
A very popular Portuguese dish, green peas and chouriço combines the wonderful flavors of Chouriço with some tasty vegetables and eggs in a simple and easy way.

Ingredients
1/2 onion chopped4 garlic cloves, chopped1 tbsp olive oil2/3 cups water or chicken broth1 chouriço sausage, sliced2 lbs fresh or frozen green peas thawed3 eggsSalt and pepper to taste

Preparation
- Saute the onion and garlic in a saucepan with olive oil for about a minute on medium heat.
- Add the sliced chouriço and cook on low heat for approximately 15 minutes.
- Add the peas and broth or water and cook until tender and check/add salt and pepper..
- At the end, break eggs into the mixture and cook for another 2 to 3 minutes.
