Portuguese rojões (fried pork) is a traditional recipe from the Minho region, used to be served only during winter, when fresh meat was available back then, but now we can enjoy this dish all year round.

- Prepare the marinade with the wine, chopped garlic, paprika, half the cumin and salt and pepper, mix the meat in this marinade and refrigerate overnight.
- Remove the meat from the marinade and lightly fry the pork cubes on the olive oil, previously heated.
- When the meat has a golden color, add the marinade along with the bay leaves, let it cook a little more until the meat is tender.
- Sprinkle with the remainder of the cumin before serving the rojoes, this recipe goes great with Portuguese fried cubed potatoes or white rice.
