1 pkg (500 g) of tomatoes, quarteredHalf sweet red pepper, dicedHalf of a cucumber, peeled and chopped1/2 cup of Kalamata Olives, pitted1/3 cup of finely diced white onion3 tbsp of extra virgin olive oil2 tbsp of red wine vinegar1/2 tsp of salt1/4 tsp of freshly ground black pepper3 tbsp of chopped fresh coriander and mint

Preparation
- Combine tomatoes, red pepper, cucumber, olives, onion, oil, vinegar, salt and pepper in large bowl; cover and refrigerate for 30 minutes.
- Just before serving, sprinkle with coriander and mint.
