Portuguese Chicken Fricasse

My wife tried this recipe for Portuguese chicken fricasse (fricasse de frango) in Algarve, and she says that until this day, it is one of the best chicken dishes she has ever eaten.

Ingredients

1 chicken cut into pieces3 tablespoons of olive oil1 chopped onion2 cloves of garlic, minced1 bay leaf, cut in half3/4 cup of white wine2 cups of chicken brothChopped parsley (to taste)Juice of 1 lemon1 tablespoon of flour2 egg yolksSalt (to taste)Pepper (to taste)

Get Portuguese ingredients

Preparation

  1. Season the chicken pieces with salt and pepper.
  2. In a large saucepan, add the olive oil, onion, garlic and bay leaf.
  3. Stir and let it heat well.
  4. As soon as the onion begins to glaze, add the chicken pieces.
  5. Cover and cook over medium heat until the meat is cooked, without browning.
  6. Turn the meat over and let it brown evenly.
  7. When the chicken is golden brown, add the white wine and chicken broth.
  8. Cover and cook over medium heat for 40 minutes.
  9. With a spoon, mix the flour with the yolks.
  10. Gradually add the lemon juice.
  11. After 40 minutes, lower the heat and add the parsley.
  12. Finally, add the flour dissolved in the egg yolks and stir quickly.
  13. As soon as it thickens and before it begins to boil, turn off the heat.

The Chicken Fricasse was wonderful. I used my Heavy Stock Pot. And I made extra gravy and cooked dumplings in the liquid as my aunt did.

Last time I had this is when I was doing. My military service back in 1985. My mom made it for on one of my R & R weekends. Ate like a priest. Tried to cook it after my military service just never got it as good my mom's.
